Vegetarian

But, not vegan as it has feta cheese in it. Trying to do more meatless meals.

A food post for a change

My second attempt at pumpkin ravioli was pretty great. I am more satisfied with my adjustments and final product this time.

Happy Halloween

This is what's left. Served properly, this was much more attractive.  But, I made pumpkin ravioli for dinner.  I was feeling rather boss-like for this creation.  It was o.k. the first time but was definitely one of those things that you already have plans for improving on the second take.

Fall

Awesome fall treat!  And, they take about 5 minutes to make. Used this recipe since it didn't require a candy thermometer, since I don't own one:

More snacks

They were that good!  This is another chicken batch and I've since made a batch with pulled pork.  My roommate prefers them with BBQ sauce.

Taquitos

Made healthy.  My mom came across this recipe where you use corn tortillas, Laughing Cow cheese, and reduced fat shredded cheddar.  I added some chicken and a few spices.  They're of course baked, not fried.  They got a thumbs up.

Lasagna cups

It's been awhile since I posted food, so here's something fun and yummy that I just made.  Lasagna using wonton wrappers in cupcake tins.

Homemade dog food

Fit for a king, naturally. Louie hasn't been eating so good so I've made up a bunch of bags of food for him. Here is a pasta, carrot, beef dish:

And, here it all is ready for the freezer. I also made chicken, rice, and carrots and ground pork and pasta.

Donuts

These are the real deal: homemade dough with yeast that had to rise, the whole 9. The review was that they were 'cakier' than anticipated and did I forget the vanilla in the glaze? Oh yes, I did, and for that comment alone, this will probably be my last time making donuts. But, it didn't end there, one more zinger, "Those biscuit ones are just as good."

Dinner for a couple of nights

Stuffed cabbages, pigs in a blanket, whatever you want to call them, they cover dinner for a couple of nights and are therefore perfect.

Super Bowl treats!

Homemade, healthy, egg rolls! I made another batch last night because the roommate liked them so much. YAY!

Super Bowl Finale

I have been sick for about 6 weeks now, so when my roommate was invited to a Super Bowl party, he declined, which I thought was pretty nice. So, I made some Super Bowl treats for one and this little crustless apple pie for dessert. I always send an apple pie to the Super Bowl that he usually goes to, so I didn't want him to miss out.

Valentine Candies

I have been wanting to make these and finally got around to it today. I made these with leftover candy canes and white chocolate in a heart mold. I am hoping when I am out of candy canes, other hard mint candies will work because I think these are so cute and want to give them to everyone for Valentine's Day!
