Lunch



So, another week of travel begins for Josh. I wanted to make something yummy before he left for the airport. These are a cinch:

3/4 c. flour

3/4 tsp baking powder

3/4 milk (recipe calls for whole, I used skim)

1 egg

mozzarella cheese

pepperoni

basil (the recipe of course calls for fresh, but since I could only find the expensive, organic stuff at the store, I used a few sprinkles of italian seasoning)

Mix it up, let sit for 10 minutes and then bake in greased muffin cups at 375 for 20-25 minutes. These freeze well so you can throw the rest in the freezer for afternoon or late night snacks.
