Food post!

The weekend plans got turned upside down due to a canceled flight last night in Chicago. So, this morning, I figured I would destroy the kitchen, but basically get most of the weekend's cooking done and even have some food to freeze, before my roommate could get home today (which ended up being 1:40! Geesh.....).


First, Spinach Cheese Turkey Meatballs.

I used 2 lbs. ground turkey breast

1 box of chopped spinach, thawed and drained

enough bread crumbs to cover the meat

a package of Kroger fat free mozarella cheese

a few onion flakes

a little garlic salt

Then, I rolled them into balls and browned them.

Then, I baked them at 350 for about 30 mins.

Then, I put them in homemade (steamy in this photo!) sauce! I'll keep some out for tonight and tomorrow, and the rest, I'll freeze. It freezes great and is so nice to have on hand for quick week night dinners--just boil pasta!

But, this was dinner. I needed to think of something for when he got home....whenever that was going to be! So, I made this reuben dish. You take a can of sauerkraut, spread it in the bottom of the pan, top with chicken breasts--I browned them first:

Then, cover with Thousand Island dressing, bake, and top with swiss cheese and stick under the broiler for a few minutes. I forgot to take a picture of the grand finale:(
