It's been awhile

Since I made a food post. I thought I'd share this recipe because it's a good one. The first time I made these was when I was helping a friend get her freezer stocked for a busy month ahead. This recipe is meant to be frozen. There are a bunch of recipes out there that are specifically written with ingredients that freeze well so that you can do batch cooking and make your life easier by always having something in the freezer. Pictured below are the meatballs (which are made with ground turkey) browning before they go in the oven. If they look large, it's because they are. I don't always make them this big, but since I wasn't freezing this batch, I made them big in honor of the best person I've ever known, my Grandpa. We used to go to this restaurant near their house for every special occasion and he would get "spaghetti and meatBALL". One was all you could eat as they were about the size of a fist.

So, here they are baking. They just came out of the pan and I put them in muffin cups to bake. Some cups are filled with water. If you don't know why, that's to try to achieve even baking/cooking. Do that with your empty cups when you're making muffins, cupcakes, whatever, and try to spread them out, it's supposed to make a difference. A nun taught me this when I was in school, so it must be the truth. Here, you can make them too!

1 lb ground turkey

1 box chopped spinach, thawed and drained

1/2 c. parmesan cheese

4 oz. mozarella cheese

1 cup crushed bran flakes

1/4 egg substitute or 1 egg

1/4 c. dried onion flakes (don't use)

3 minced cloves garlic

1 tsp. italian seasoning

1/2 tsp salt

1/8 tsp pepper

Mix all ingredients together and shape into balls. Fry meatballs until browned. Bake at 350 degrees until center is cooked.

  3. I am just seeing this post for the first time. These look delicious!!! I actually just purchased some ground turkey and was wondering what to make with them!!! Now do you have any ideas for a great recipe that calls for ground pork? I have some of that too and am not sure what to do with it!
